How To Make Blackened Salmon Salad

A little charred flesh is not a bad thing! This blackened salmon salad contains a little sweetness that goes with the briny salmon flavor on top of veggies.

Serves:

Ingredients

For Salad:

  • 12ozsalmon fillets,(2 fillets)
  • 2tbspolive oil
  • 1tbspblackening seasoning
  • 4cupsred leaf lettuce
  • ½avocado,sliced
  • 1cupcucumbers,sliced
  • 2oranges
  • ¼cupred onion,thinly sliced
  • ¼cupfeta cheese

For Dressing:

  • 3tbspvegetable oil
  • 2tbsporange juice
  • 1tsporange zest
  • 1tbspcider vinegar
  • 1tsphoney
  • 1tspdijon mustard
  • salt and pepper,to taste

Instructions

Dressing:

  1. Combine all dressing ingredients in a mason jar or container. Shake to mix and refrigerate.

Salad:

  1. Season salmon with blackening seasoning. Heat olive oil over medium-high heat.

  2. Cook for 4 to 5 minutes per side or until just cooked through. Rest 5 minutes while preparing the salad.

  3. Divide lettuce between the bowls. Divide remaining salad ingredients over bowls.

  4. Top with salmon and drizzle with dressing.

  5. Serve and enjoy.
