Ingredients
- 1cupuncooked quinoa
- 2cupswater or broth
- 2Roma tomatoes,diced
- 1ripeavocado,diced
- 15ozblack beans
- 12ozcorn
- 1bell pepper,diced
- ¼cupgreen onion,diced
- 1jalapeno pepper,seeded and diced
- ⅓cupcilantro,chopped
For Dressing:
- ¼cupvegetable oil
- 1½tbsplime juice
- 1tspsugar
- 1tspcumin
- ¼tspgarlic powder
- ½tbspred wine vinegar
- ⅛tspsalt
- ¼tsppepper
Instructions

Cook quinoa according to package directions and allow to cool.

Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and cilantro in a large bowl.

In a small bowl, combine all dressing ingredients and mix well. Pour over vegetables and toss to coat. Add quinoa and combine.

Refrigerate until ready to serve.
