  • 1cupuncooked quinoa
  • 2cupswater or broth
  • 2Roma tomatoes,diced
  • 1ripeavocado,diced
  • 15ozblack beans
  • 12ozcorn
  • 1bell pepper,diced
  • ¼cupgreen onion,diced
  • 1jalapeno pepper,seeded and diced
  • cupcilantro,chopped

For Dressing:

  • ¼cupvegetable oil
  • tbsplime juice
  • 1tspsugar
  • 1tspcumin
  • ¼tspgarlic powder
  • ½tbspred wine vinegar
  • tspsalt
  • ¼tsppepper


  1. Cook quinoa according to package directions and allow to cool.

  2. Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and cilantro in a large bowl.

  3. In a small bowl, combine all dressing ingredients and mix well. Pour over vegetables and toss to coat. Add quinoa and combine.

  4. Refrigerate until ready to serve.
