This refreshing berry salad comes with cheese balls rolled in almonds and cranberries, over a bed of greens and tossed in a tangy-sweet vinaigrette.

Ingredients

For the Almond-Goat Cheese Balls:

  • 3tbspalmonds,chopped
  • 3tbspcraisins,chopped
  • 4ozsoft goat cheese log,cold

For Dressing:

  • 1tbspred wine vinegar
  • tbspcider vinegar
  • tbspolive oil
  • 1tspshallots,minced
  • 1tbsphoney

For Salad:

  • 5ozmixed baby greens,(8 cups)
  • strawberries,sliced

Instructions

  1. Roll the cheese into 12 small balls with hands to about ⅓ ounce each.

  2. In a small bowl, combine the nuts and Craisins.

  3. Roll the cheese in the nut mix, then refrigerate until ready to eat.

  4. Place all the dressing ingredients in a small bowl and whisk.

  5. Combine the salad ingredients in a big salad bowl then toss with the dressing or divide the ingredients equally between four plates.

  6. Serve, and enjoy!
