Ingredients
- 1 box Beef Rice-a-Roni, (192 g)
- 1 bag cheese tortellini, tricolor, frozen
- 3 tbsp tomato tapenade, or Italian style paste
- ½ cup mayonnaise
- 1 tbsp red wine vinegar
- 4 cups roast beef, cooked
- ½ cup frozen peas
- 1 raw carrot, sliced thin
- ½ cup bell pepper, diced
- salt
- pepper , to taste
- ½ tsp red pepper, ground, optional
- ½ cup parmesan cheese, shredded, optional
Instructions
- Cook rice according to box directions, and cook tortellini to "al dente" state. Chill.
- Mix tomato tapenade, vinegar, and mayonnaise until well blended.

Cut cooked, roast beef into cubes or small chunks.
- Add everything together in a large bowl including peas and peppers.
- Add salt and pepper to taste.
- Mix well, but gently.
- Chill for a few hours before serving.
