How To Make Bean Salad with Yogurt Avocado Dressing

Ingredients
- 2 cups cooked beans (black, kidney, or chickpeas)
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 bell pepper, diced
- 1/4 cup chopped fresh cilantro
- For the Yogurt Avocado Dressing:
- 1 ripe avocado
- 1/2 cup plain yogurt
- 1 clove garlic, minced
- Juice of 1 lime
- Salt and pepper to taste
Instructions

In a large bowl, combine the beans, cherry tomatoes, red onion, bell pepper, and cilantro.

In a separate bowl, mash the avocado until smooth. Add in the yogurt, garlic, lime juice, salt, and pepper. Mix well to combine.

Pour the yogurt avocado dressing over the bean salad and toss gently to coat.
