  • 3large tomatoes,ripe, cut into wedges
  • 12ozchicken breast,from rotisserie chicken
  • 5ozavocado,sliced
  • 2tbspextra virgin olive oil
  • 1lemon
  • ½cupfresh small basil leaves
  • kosher salt
  • fresh black pepper


  1. Divide the tomatoes between 4 plates or bowls.

  2. Shred the chicken breast into large pieces and arrange them over the tomatoes with the avocado.
