How To Make Balsamic Chickpea, Avocado and Feta Salad

Fresh, healthy, and easy! This salad recipe is a perfect if you want to cut on carbs. It has chickpeas, avocados, and balsamic dressing for bright flavors.

For The Salad:

  • 4cupsromaineshredded, or cobb, lettuce
  • 14ozchickpeasrinsed and drained
  • 14ozgrape tomatoeshalved or cherry tomatoes
  • 3.5ozfat feta cheesereduced
  • 2hass avocadospitted, and chopped
  • Salt and black pepperto taste

For The Dressing:

  • 2tbspolive oil
  • 1tbspbalsamic vinegar

Instructions

  1. In a medium bowl, combine salad ingredients. Set aside.

  2. Whisk the dressing ingredients together in a serving jug.

  3. Pour the dressing over the salad. Season with salt and pepper to taste.

  4. Serve.
