Ingredients

  • 4 bacon slices, cooked and crumbled
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 8 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Spread the sliced onions on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 30 minutes or until the onions are caramelized and golden brown.

  3. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, and crumbled feta cheese.

  4. Add the crumbled bacon and caramelized onions to the bowl and toss to combine.

  5. Serve the salad immediately and enjoy!
