  • 4ozChavrie goat cheese log
  • 8cupsmixed baby greens
  • 4small red beets,cooked and cut
  • 2ozpecans,glazed
  • 2tbspbalsamic
  • 2tbspextra virgin olive oil
  • 1tbsphoney

Instructions

  1. Make a vinaigrette by whisking the olive oil, balsamic and honey until smooth.

  2. In a large bowl, toss the greens with vinaigrette and mix well.

  3. Evenly divide the greens between four bowls. Top each bowl with one beet, 1 ounce of goat cheese, and pecans.
