This avocado salad has a nice blend of both crunchy and sweet salad ingredients drizzled with some spiced Dijon and creamy buttermilk dressing.

For Dressing:

  • 1tbspshallots,minced
  • 2tspdijon mustard
  • 2tbspwhite wine vinegar
  • 6tbspbuttermilk,1%
  • 2tbspextra virgin olive oil
  • ¼tspgarlic powder
  • ½tspkosher salt
  • pinchblack pepper

For Salad:

  • 1headromaine,chopped about 5 cups
  • 1medium corn on the cobb,cooked and cut off husk
  • 5large grape tomatoes,quartered
  • ½large avocado,3oz, sliced
  • ¼cupred onion,sliced

Instructions

  1. Whisk all the dressing ingredients together.

  2. Place lettuce in a large bowl, top with corn, tomatoes, avocado and red onion and drizzle with dressing.
