How To Make Avocado Egg Salad

Adding avocados to the traditional egg salad is a nice twist to this delicious side dish. Top with lettuce and tomatoes for a fresh taste.

  • 6hard boiled eggs
  • 1avocado
  • 2tspfresh lemon Juice
  • ¼cupmayonnaise
  • ¼tspgarlic powder
  • 1tbspchives,thinly sliced
  • 2tomatoes
  • lettuce
  • 12slicesbacon,cooked crisp
  • salt & pepper,to taste


  1. Mash ½ of the avocado with lemon juice.

  2. Add egg yolks, mayonnaise, garlic powder, salt, pepper and chives. Combine until smooth.

  3. Chop egg whites. Dice remaining ½ of the avocado. Stir egg whites and avocado into the egg yolk mixture.

  4. Top each flatbread with lettuce, tomato slices, 2 slices of bacon and the avocado egg salad mixture.
