How To Make Authentic German Potato Salad

Ingredients
- 4 large potatoes
- 1/2 cup diced bacon
- 1/4 cup diced onion
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons vegetable broth
- 1 tablespoon granulated sugar
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions

In a large pot, bring salted water to a boil. Add the potatoes and cook until fork-tender, about 20 minutes. Drain and let cool slightly.

While the potatoes are cooling, cook the diced bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and set aside.

In the same skillet, add the diced onion and cook until softened, about 5 minutes.

In a small bowl, whisk together the apple cider vinegar, Dijon mustard, vegetable broth, sugar, salt, and pepper.

Once the potatoes are cool enough to handle, peel and slice them into 1/4-inch thick slices.

In a large bowl, combine the sliced potatoes, cooked bacon, cooked onions, and the vinegar and mustard dressing. Toss gently to coat everything in the dressing.

Let the potato salad sit for at least 15 minutes before serving, allowing the flavors to meld together.

Sprinkle with chopped fresh parsley before serving.
