How To Make Asparagus Salad with Lemon Vinaigrette

  • 1bunchasparagus,cut into thirds
  • 3cupsspinach
  • ½cupradish,sliced
  • 1cupcherry tomatoes,sliced in half
  • ½cuppeas
  • ½red onion,sliced
  • ¼cupfeta cheese

For Lemon Vinaigrette:

  • ¼cupolive oil
  • 1lemon,juiced
  • 2tbspapple cider vinegar
  • salt and pepper,to taste


  1. In a large pot, boil the asparagus for 3 to 5 minutes. Rinse in cold water.

  2. In a large bowl, combine the spinach, radish, cherry tomatoes, peas, onion, and feta cheese.

Lemon Vinaigrette:

  1. In a small bowl, whisk together olive oil, lemon juice, vinegar, salt and pepper.

  2. Pour the desired amount of dressing over the salad and mix together.

  3. Serve and enjoy.
