How To Make Asian Cucumber Salad

For Salad:

  • 3cupscucumbers,peeled, seeded and sliced
  • ¼cupred onion,thinly sliced
  • ½cupred bell pepper,chopped

For Dressing:

  • 2tbspsoy sauce
  • 1tbsprice vinegar
  • 1tbsptoasted sesame oil
  • 2tsphoney
  • 2tbspcilantro,chopped, or sliced green onion
  • 1tbspsesame seeds
  • salt and pepper,to taste


  1. Place the cucumbers, red onion, and red bell pepper in a large bowl.

  2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, cilantro, and sesame seeds.

  3. Add salt and pepper to taste.

  4. Pour the dressing over the vegetables and toss to coat. Serve immediately or store in the refrigerator for up to 8 hours.
