How To Make Arugula with Pomegranates, Blue Cheese and Pistachios

This arugula with pomegranates recipe also has pistachios and blue cheese on it. It’s the perfect salad for a light lunch or can also be a great side dish.

  • 4cupsarugula
  • ½cuppomegranate arils,from POM Wonderful
  • ¼cupblue cheese,crumbled
  • 2tbsppistachios,shelled
  • Pomegranate Vinaigrette
  • 1tspPOM Wonderful pomegranate juice
  • 1tspbalsamic vinegar
  • 2tspextra virgin olive oil
  • salt and fresh pepper


  1. Whisk vinegar, pomegranate juice, olive oil, salt and pepper in a small bowl.

  2. Place arugula on two plates, top with blue cheese, pomegranates, pistachios and vinaigrette.
