This arugula salad is the perfect salad to prepare if you are looking for a light meal made with white beans, tomatoes all tossed in a lemon dressing.

For the Salad:

  • 4cupsarugula
  • 1cupcherry tomatoes,halved
  • 1cupcannellini beans,rinsed and drained
  • ¼cupred onion,thinly sliced
  • ½cupparmesan cheese,shaved
  • 2tbsppine nuts,toasted
  • 1tbspparsley,chopped

For the Dressing:

  • 4tbspolive oil
  • 2tbsplemon juice
  • 1tspdijon mustard
  • Salt and pepper,to taste


  1. Place the arugula, cherry tomatoes, beans, onion, parmesan cheese, and pine nuts in a large bowl.

  2. In a small bowl, whisk together the olive oil, lemon juice, mustard, salt, and pepper.

  3. Pour the dressing over salad and toss to coat. Sprinkle with parsley and serve.
