How To Make Arugula Salad with Shaved Parmesan, Lemon & Olive Oil

Steaks and pizzas become healthier and more complete with this arugula salad. It’s seasoned with olive oil and lemon and tossed with shaved parmesan.

  • 5ozarugula,(or 4 generous handfuls)
  • 1tbspfresh lemon juice,from one lemon
  • 3tbspextra virgin olive oil
  • tspsalt
  • freshly ground black pepper,to taste
  • Parmigiano-Reggiano cheese


  1. In a large salad bowl, combine the lemon juice, extra virgin olive oil, salt and pepper. Place the arugula in the bowl and toss with the dressing.

  2. Using a vegetable peeler, shave sheets of Parmesan cheese onto salad (to taste). Serve immediately.
