How To Make Apple Pecan Chicken Salad

Inspired by autumn, this chicken salad gets some crunch from the pecans and the apples, and tartness from the cranberries for a flavorful dish.

For Salad:

  • 1lbchicken breasts,boneless, skinless, cooked, cooled and diced into small cubes
  • cupsgolden delicious apple,or gala or fuji apple, chopped small
  • cuppecans,chopped
  • cupdried cranberries,roughly chopped

For Dressing:

  • 5.3ozGreek yogurt,(1 container), fat-free plain
  • 2tbspmayonnaise
  • 1tbspred wine vinegar
  • tsprosemary,finely chopped
  • 1tspdijon mustard
  • ½tsphoney
  • ½tsponion powder
  • salt and freshly ground black pepper
  • lettuce,or whole grain bread, for serving


  1. Add the chicken, apples, pecans and cranberries to a large mixing bowl.

  2. In a separate small mixing bowl, mix together the Greek yogurt, mayonnaise, red wine vinegar, rosemary, mustard, honey and onion powder. Season with salt and pepper to taste.

  3. Pour over the chicken mixture then toss to evenly coat.

  4. Serve in lettuce or on whole grain bread, and enjoy!
