Ingredients

  • 1lbbrussels sprouts,shredded
  • 1green apple,sliced
  • 1red apple,sliced
  • ½lbbacon,cooked and crumbled
  • ¼cupcranberries
  • ¼cuppumpkin seeds
  • ¼cupgoat cheese

For Maple Dijon Dressing:

  • ¼olive oil
  • 2tbspmaple syrup
  • 2tbspapple cider vinegar
  • 1tbspdijon mustard

Instructions

  1. In a large mixing bowl, add the shredded Brussels sprouts, apples, bacon, cranberries, pumpkin seeds and goat cheese.

Maple Dijon Dressing:

  1. In a small bowl, whisk together the olive oil, maple syrup, apple cider vinegar, and mustard.

  2. Pour over the salad and toss until coated. Serve and enjoy.
