How To Make Sweet Potato, Chickpea & Chorizo Hash

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can chickpeas, rinsed and drained
  • 1 chorizo sausage, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 eggs
  • Fresh cilantro, for garnish

Instructions

  1. Heat a large skillet over medium heat and add the chorizo. Cook until browned and crispy, about 5 minutes. Remove from the skillet and set aside.

  2. In the same skillet, add the diced sweet potatoes and cook until they start to soften, about 8-10 minutes.

  3. Add the diced onion, bell pepper, and minced garlic to the skillet and cook until the vegetables are tender, about 5 minutes.

  4. Stir in the chickpeas, cooked chorizo, smoked paprika, and season with salt and pepper.

  5. Using a spoon, create 4 small wells in the hash mixture and crack an egg into each well. Cover the skillet and cook until the eggs are cooked to your liking, about 5-7 minutes.

  6. Garnish with fresh cilantro and serve hot.
