How To Make Sweet Potato, Chickpea & Chorizo Hash

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can chickpeas, rinsed and drained
- 1 chorizo sausage, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 eggs
- Fresh cilantro, for garnish
Instructions

Heat a large skillet over medium heat and add the chorizo. Cook until browned and crispy, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the diced sweet potatoes and cook until they start to soften, about 8-10 minutes.

Add the diced onion, bell pepper, and minced garlic to the skillet and cook until the vegetables are tender, about 5 minutes.

Stir in the chickpeas, cooked chorizo, smoked paprika, and season with salt and pepper.

Using a spoon, create 4 small wells in the hash mixture and crack an egg into each well. Cover the skillet and cook until the eggs are cooked to your liking, about 5-7 minutes.

Garnish with fresh cilantro and serve hot.
