Ingredients

  • 1 lb ground pork
  • 2 tbsp vegetable oil
  • 1 small butternut squash, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large skillet or wok, heat oil over medium-high heat. Add ground pork and cook, breaking it up with a wooden spoon, until browned and cooked through.

  2. Add diced butternut squash, onion, garlic, and ginger to the skillet. Stir to combine.

  3. In a small bowl, whisk together soy sauce and cornstarch. Pour mixture over pork and squash, and stir to combine.

  4. Cover and cook for 10-15 minutes, until squash is tender and pork is fully cooked.

  5. Season with salt and pepper to taste.

  6. Serve over cooked rice.
