How To Make Jerk Pork with Rice & Beans

Serves:

Ingredients

  • 1.5 lbs pork shoulder, cut into cubes
  • 4 tbsp jerk seasoning
  • 2 tbsp vegetable oil
  • 1 cup long grain rice
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and minced
  • 1 tsp dried thyme
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 tsp brown sugar
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, marinate the pork cubes with jerk seasoning. Let it sit for at least 30 minutes or overnight for more flavor.

  2. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated pork and cook until browned on all sides, about 5 minutes. Remove from heat and set aside.

  3. In the same skillet, add the chopped onions, minced garlic, and scotch bonnet pepper. Saute until the onions are translucent, about 5 minutes.

  4. Add the thyme, allspice, paprika, and brown sugar to the skillet. Stir well to combine.

  5. Return the browned pork to the skillet and pour in the chicken broth. Bring to a boil, then reduce heat to low and simmer, covered, for 1.5 to 2 hours or until meat is tender.

  6. In the meantime, cook the rice according to package instructions. Once cooked, fluff it with a fork.

  7. Add the black beans to the cooked rice and stir to combine. Season with salt and pepper if needed.

  8. Serve the jerk pork over the rice and beans mixture. Garnish with fresh cilantro.
