How To Make Pork Tenderloin with Chipotle Sauce & Pickled Red Onions

Serves:

Ingredients

  • 2 pork tenderloins
  • 2 chipotle peppers in adobo sauce
  • 2 cloves of garlic
  • 1/4 cup of orange juice
  • 2 tablespoons of honey
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • 1 red onion
  • 1/2 cup of apple cider vinegar
  • 1 tablespoon of sugar

Instructions

  1. Preheat your grill or oven to medium-high heat.

  2. In a blender or food processor, combine chipotle peppers, garlic, orange juice, honey, olive oil, salt, and pepper. Blend until smooth to make the chipotle sauce.

  3. Season the pork tenderloins with salt and pepper, then brush them with the chipotle sauce.

  4. Grill or roast the pork tenderloins for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).

  5. While the pork is cooking, thinly slice the red onion and place it in a bowl.

  6. In a small saucepan, combine apple cider vinegar, sugar, and a pinch of salt. Bring to a simmer over medium heat, stirring until the sugar dissolves. Pour the hot vinegar mixture over the sliced onions.

  7. Let the pickled onions marinate for at least 10 minutes, stirring occasionally.

  8. Once the pork tenderloins are cooked, let them rest for 5 minutes before slicing.

  9. Serve the sliced pork with a drizzle of the remaining chipotle sauce and a spoonful of pickled onions.
