How To Make Loin of Bacon with Colcannon Butter Sauce

Ingredients

  • 4 slices of loin bacon
  • 4 large potatoes, peeled and diced
  • 4 cups of cabbage, shredded
  • 1/2 cup of milk
  • 4 tbsp of butter
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the bacon slices on a baking sheet and bake for 20-25 minutes, until crispy.

  3. While the bacon is cooking, boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.

  4. In a separate pot, blanch the cabbage in boiling water for 5 minutes. Drain and set aside.

  5. In a small saucepan, heat the milk and butter over low heat until the butter is melted.

  6. Mash the potatoes with a potato masher or fork until smooth. Stir in the blanched cabbage and the milk mixture until well combined. Season with salt and pepper to taste.

  7. Serve the bacon slices on top of the colcannon butter sauce.
