Ingredients

  • 4 pork chops
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh herbs (such as thyme, rosemary, or parsley)
  • Salt and pepper, to taste
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 eggplant, cubed
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 2 tablespoons balsamic vinegar
  • Fresh basil, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine the minced garlic, chopped fresh herbs, olive oil, salt, and pepper. Rub this mixture all over the pork chops.

  3. Heat a large oven-proof skillet over medium-high heat. Sear the pork chops on both sides until golden brown, about 2-3 minutes per side. Transfer the skillet to the preheated oven and continue cooking for another 10-15 minutes, or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

  4. While the pork is cooking, prepare the ratatouille. Heat a tablespoon of olive oil in a separate skillet over medium heat. Add the sliced onion and cook until softened, about 5 minutes.

  5. Add the sliced zucchini, yellow squash, bell peppers, and cubed eggplant to the skillet. Cook for another 5 minutes, stirring occasionally.

  6. Add the diced tomatoes and balsamic vinegar to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender and the flavors have melded together.

  7. Serve the herb and garlic pork chops alongside the summer ratatouille. Garnish with fresh basil.
