How To Make Chorizo, Rocket & Preserved Lemon Calzones

Serves:

Ingredients

  • 1 lb (450g) store-bought pizza dough
  • 4 oz (113g) chorizo, sliced
  • 2 cups (60g) rocket leaves
  • 1 preserved lemon, thinly sliced
  • 1 cup (100g) grated mozzarella
  • 1 egg, beaten
  • Salt and pepper, to taste
  • Olive oil, for brushing

Instructions

  1. Preheat your oven to 425°F (220°C).

  2. Roll out the pizza dough into 4 equal-sized circles.

  3. In a skillet, cook the chorizo slices until crispy. Remove from heat and set aside.

  4. On each dough circle, place a handful of rocket leaves, a few slices of preserved lemon, and some cooked chorizo. Top with a sprinkle of mozzarella.

  5. Fold the dough circles in half, and press the edges together to seal the calzones.

  6. Brush the tops of the calzones with beaten egg and sprinkle with salt and pepper.

  7. Transfer the calzones to a baking sheet lined with parchment paper and brush the tops with olive oil.

  8. Bake in the preheated oven for 20-25 minutes, or until golden brown.

  9. Serve hot and enjoy!
