Flank Steak with Avocado Corn Salsa Recipe

How To Make Grilled Garlic Herb Flank Steak with Avocado Corn Salsa

This flank steak is flavored with garlic, rosemary, thyme, and oregano then topped with a vibrant avocado and corn salsa to make a delicious dish.

Total: 20 minutes

Serves:

Ingredients

  • 2lbsflank steak
  • ½cupextra virgin olive oil
  • 3clovesgarlic,minced
  • 1tbsprosemary,chopped
  • 1tbspthyme,chopped
  • 1tbsporegano,chopped
  • 1tspsalt
  • ½tsppepper

For Avocado Corn Salsa:

  • 2avocados,diced
  • 3roma tomatoes,diced
  • 1canyellow corn,(11 oz), drained
  • ½red onion,diced
  • ¼cupcilantro,chopped
  • juice of one lime

Instructions

  1. In a large bowl or ziplock bag, add olive oil, garlic, chopped rosemary, thyme, oregano, salt and pepper. Add flank steak and marinate for 1 hour or overnight.

  2. Preheat grill to high heat. Discard marinade and add flank steak to the grill. Let the steak sear on high heat for 1 to 2 minutes on each side and then move to indirect heat and let cook until desired doneness. Medium rare is 130 to 135 degrees F on a thermometer.

  3. Remove steak from heat and cover with aluminum foil and let rest for 10 minutes.

  4. To make the avocado corn salsa: Add avocado, tomatoes, corn, red onion, cilantro and lime juice to a medium sized bowl and mix until combined.

  5. Slice the steak across the grain and top with avocado corn salsa.
