Ingredients

  • 4 venison tenderloin steaks
  • 8 slices of bacon
  • 4 cloves of garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Wrap each venison tenderloin steak with 2 slices of bacon, securing with toothpicks if needed.

  3. Heat a large skillet over medium-high heat and sear the bacon-wrapped tenderloins for 2-3 minutes on each side until bacon is crispy.

  4. Transfer the tenderloins to a baking dish and bake in the preheated oven for 10-12 minutes for medium-rare, or until desired doneness.

  5. Meanwhile, in the same skillet, sauté the minced garlic until fragrant.

  6. Add the heavy cream and bring to a simmer.

  7. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

  8. Remove the bacon-wrapped venison tenderloins from the oven and let rest for a few minutes.

  9. Serve the tenderloins with the garlic cream sauce, garnished with fresh parsley.
