How To Make Slow Cooker Chicken Cacciatore
This chicken cacciatore recipe is a slow-cooked version that uses bone-in chicken, mushrooms, bell pepper, and onions in a rich and thick tomato sauce.

Ingredients
- 6chicken thighs,bone-in
- salt & pepper,to taste
- 1green bell pepper,cored, seeded and diced
- 1red bell pepper,cored, seeded and diced
- 1yellow onion,diced
- 8ozsliced mushrooms
- 3cloves garlic,minced
- 14oztomato sauce
- 14ozdiced tomatoes,with juice
- ½cupchicken stock
- 2tspItalian Seasoning
- ½tspcrushed red pepper flakes
- ¼cupkalamata olives,drained and pitted or 1½ tbsp capers
Instructions
Season chicken with salt & pepper and cook over medium heat for about 3 to 4 minutes or until skin is browned.
Top the chicken with diced bell peppers, onion, mushrooms, and garlic.
Combine remaining ingredients (except olives) and pour over the vegetables.
Cover the slow cooker and cook on High for 3 to 4 hours or on Low for 7 to 8 hours or until chicken is cooked through.
After 4 hours carefully remove the chicken, add olives (or capers), and stir to combine the sauce.
Serve the chicken over pasta with the sauce from the slow cooker.
