For Pico De Gallo:

  • 1tbspcilantro,chopped
  • 1tbsptomato,chopped
  • 1tbspscallion,chopped
  • ½lime juice,fresh

For Quesadilla:

  • cooking spray
  • 2whole wheat flour tortillas,reduced-carb
  • 6tbspcheddar jack,reduced fat, shredded
  • ½cuppicadillo


Pico De Gallo:

  1. Combine the cilantro, tomato, scallion, and lime juice in a small bowl.


  1. Heat a nonstick skillet over medium heat, then spray the skillet with oil.

  2. Add a tortilla, then brown about 2 minutes on each side.

  3. Spread ¼ cup of the picadillo on half of the tortilla, then top with cheese and half of the pico de gallo. Fold and press down with a spatula.

  4. Cook for 1 to 2 minutes on each side, until the cheese is melted and the tortilla is crisp.

  5. Remove from heat, then cut into 3 pieces. Repeat with the remaining quesadillas.

  6. Serve warm, and enjoy!
