How To Make Picadillo Quesadillas

Ingredients
For Pico De Gallo:
- 1tbspcilantro,chopped
- 1tbsptomato,chopped
- 1tbspscallion,chopped
- ½lime juice,fresh
For Quesadilla:
- cooking spray
- 2whole wheat flour tortillas,reduced-carb
- 6tbspcheddar jack,reduced fat, shredded
- ½cuppicadillo
Instructions
Pico De Gallo:

Combine the cilantro, tomato, scallion, and lime juice in a small bowl.
Quesadillas:

Heat a nonstick skillet over medium heat, then spray the skillet with oil.

Add a tortilla, then brown about 2 minutes on each side.

Spread ¼ cup of the picadillo on half of the tortilla, then top with cheese and half of the pico de gallo. Fold and press down with a spatula.

Cook for 1 to 2 minutes on each side, until the cheese is melted and the tortilla is crisp.

Remove from heat, then cut into 3 pieces. Repeat with the remaining quesadillas.

Serve warm, and enjoy!
