Preparation: 15 minutes
Cooking: 15 minutes
Total: 30 minutes

  • 1carrot
  • ½cupwalnuts
  • 1cupmushrooms
  • 1canblack beans
  • ½cupfrozen corn kernels
  • ¼cupparmesan cheese,shredded
  • ½cupmayonnaise
  • 1tspsalt
  • ½tspground black pepper
  • 1tsphot pepper sauce
  • cooking oil
  • 8buns

Optional Fixings:

  • ketchup
  • mustard
  • mayo
  • lettuce
  • tomato
  • pickles

  1. Use the food processor with its shredder attachment to grate the carrot. Unplug the machine, remove the shredder attachment, and put in the blade attachment.

  2. Add the walnuts and mushrooms, put the lid on, and process until minced. Add the beans, corn, cheese, mayo, salt, pepper, and hot sauce. Pulse exactly 4 times, 1 second per pulse, until some of the mixtures are mushy and some are chunky.

  3. Dump the mixture into the mixing bowl. Use clean hands to form patties 1⁄2-inch thick and as big around as the buns. Put the patties on the plate.

  4. Pour enough cooking oil in the skillet to lightly coat the bottom, about 2 teaspoons. Heat on medium until the oil shimmers.

  5. Then put the veggie patties in the skillet so they’re not touching and cook for 5 to 7 minutes on each side, or until the outside is brown and slightly crispy. Turn off the stove when they are done.

  6. Fix burgers as desired. Serve and enjoy.
