How To Make Lamb & Quinoa Burgers with Beetroot Tzatziki

Ingredients
- 500g ground lamb
- 1 cup cooked quinoa
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 burger buns
- Lettuce and tomato slices, for serving
- 1 cup Greek yogurt
- 1 small beetroot, grated
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper, to taste

In a large bowl, mix together ground lamb, cooked quinoa, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper until well combined.

Divide the mixture into 4 equal portions and shape into burger patties.

Heat a grill or frying pan over medium heat and cook the lamb burgers for about 4-5 minutes on each side, or until they reach desired doneness.

While the burgers are cooking, prepare the beetroot tzatziki by mixing Greek yogurt, grated beetroot, minced garlic, lemon juice, salt, and pepper in a bowl.
