Ingredients

  • 4 burger buns
  • 2 cups of mixed vegetables (such as onions, bell peppers, carrots, and cabbage), finely chopped
  • 1 cup of chickpea flour
  • 1 tsp of red chili powder
  • 1 tsp of turmeric powder
  • 1 tsp of coriander powder
  • Salt to taste
  • Vegetable oil for frying
  • Lettuce leaves for garnish
  • Tomato slices for garnish
  • Onion slices for garnish
  • Tamarind chutney for serving
  • Green chutney for serving

Instructions

  1. In a bowl, mix together the mixed vegetables, chickpea flour, red chili powder, turmeric powder, coriander powder, and salt.

  2. Gradually add water to the mixture and mix well until a thick batter is formed.

  3. Heat vegetable oil in a deep pan for frying.

  4. Take a portion of the vegetable batter and drop it into the hot oil using a spoon. Repeat with the remaining batter.

  5. Fry the vegetable bhaji until they turn golden brown and crispy. Remove from the oil and drain on a paper towel.

  6. Toast the burger buns on a hot griddle until light golden brown.

  7. Spread tamarind chutney on the bottom half of each bun and green chutney on the top half.

  8. Place a lettuce leaf on the bottom half of each bun, followed by a tomato slice, onion slice, and a generous portion of the vegetable bhaji.

  9. Cover with the top half of the bun and press gently to assemble the burger.

  10. Serve the Bhaji Burgers hot with extra chutney on the side.
