How To Make Beany Burgers with Basil Tzatziki

Ingredients

  • 1 can (15 oz) of black beans, drained and rinsed
  • 1/2 cup bread crumbs
  • 1/4 cup diced onion
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup plain Greek yogurt
  • 1/4 cup chopped fresh basil
  • 1/4 cup diced cucumber
  • 1 tbsp lemon juice
  • 4 burger buns
  • Lettuce, tomato, and any other desired toppings

Instructions

  1. In a large bowl, mash the black beans with a fork until mostly smooth.

  2. Stir in the bread crumbs, onion, garlic, cumin, paprika, salt, and pepper until well combined.

  3. Form the mixture into 4 patties, pressing firmly so they hold together.

  4. Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown and heated through.

  5. In a small bowl, mix together the yogurt, basil, cucumber, and lemon juice to make the tzatziki sauce.

  6. Toast the burger buns if desired.

  7. Assemble the burgers by spreading a spoonful of tzatziki sauce on each bun, then adding a black bean patty and desired toppings.

  8. Serve the beany burgers with basil tzatziki immediately.
