Pork fillets drenched in apple and apricot-flavored sauce.

Ingredients

  • 2 lb pork fillets , or chops
  • 1 cup apple, chopped
  • 1 cup dried apricot, chopped
  • ½ cup fresh cranberries, optional, or dried
  • ½ cup onion, chopped
  • 2 ribs celery, sliced in ½" pieces
  • ¾ cup apple juice
  • ½ cup brown sugar
  • 1 ½ tbsp cornstarch
  • 2 tbsp water, cold

Instructions

  1. Combine all ingredients, except for cornstarch and water, in crockpot.
  2. Cover; cook on low for 7-9 hours.
  3. 30 minutes before serving, combine cornstarch and water; add to crockpot.
  4. Cover; cook 30 minutes more until sauce is thickened.
