How To Make Apple-Apricot Chops

Pork fillets drenched in apple and apricot-flavored sauce.

  • 2 lb pork fillets (or chops)
  • 1 cup apple (chopped )
  • 1 cup dried apricot (chopped )
  • ½ cup fresh cranberries (optional, or dried )
  • ½ cup onion (chopped )
  • 2 ribs celery (sliced in ½" pieces)
  • ¾ cup apple juice
  • ½ cup brown sugar
  • 1 ½ tbsp cornstarch
  • 2 tbsp water (cold )
  1. Combine all ingredients, except for cornstarch and water, in crockpot.
  2. Cover; cook on low for 7-9 hours.
  3. 30 minutes before serving, combine cornstarch and water; add to crockpot.
  4. Cover; cook 30 minutes more until sauce is thickened.
