This watermelon rind recipe is as sweet as any candy you will ever have. Also, it’s a great way to NOT waste ANY leftover watermelons. It has a surprising amount of nutritional benefits that are great for your heart circulation. Store them in jars and take a bite when you feel like snacking on something healthy.

Ingredients

  • 7 lb. watermelon rind
  • 2 cup water
  • 2 cup vinegar
  • 3 1/2 lb. sugar
  • 1/2 tsp. cinnamon oil
  • 1/2 tsp. cloves oil

Instructions

  1. Cube rind and cover with water.
  2. Cook until you can perce it easily with a fork, then drain.
  3. Make a syrup of all the other ingredients.
  4. Pour syrup over rind and let stand over night.
  5. Next morning, pour off syrup and bring it to a boil.
  6. Pour over the rind.
  7. Repeat this two more times.
  8. Put into hot sterile jars.
