Ingredients
- 7 lb. watermelon rind
- 2 cup water
- 2 cup vinegar
- 3 1/2 lb. sugar
- 1/2 tsp. cinnamon oil
- 1/2 tsp. cloves oil
Instructions
- Cube rind and cover with water.
- Cook until you can perce it easily with a fork, then drain.
- Make a syrup of all the other ingredients.
- Pour syrup over rind and let stand over night.
- Next morning, pour off syrup and bring it to a boil.
- Pour over the rind.
- Repeat this two more times.
- Put into hot sterile jars.
