Ingredients

  • 4 chicken breasts
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, dried basil, dried thyme, dried rosemary, salt, and pepper.

  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Make sure the chicken is well coated.

  3. Seal the bag and refrigerate for at least 1 hour, or overnight for maximum flavor.

  4. Preheat the grill or grill pan over medium-high heat.

  5. Remove the chicken from the marinade and discard the excess marinade.

  6. Grill the chicken for about 6-7 minutes per side, or until cooked through and no longer pink in the center.

  7. Remove from the grill and let the chicken rest for a few minutes before serving.

  8. Serve the Mediterranean chicken with your favorite sides and enjoy!
