How To Make Tzatziki (Yogurt and Cucumber Dip)

This Middle-Eastern yogurt and cucumber dip or Tzatziki lends creamy and refreshing hints from its combination if Greek yogurt and fresh mint.

Ingredients

  • cupsplain 2% Greek yogurt
  • 1cupmedium english cucumber,(about 1 medium) or hothouse cucumber, seeded, coarsely grated and squeezed as dry as possible
  • 2clovessmall garlic,minced
  • 2tbspextra virgin olive oil
  • ¾tspscant salt
  • ¼tspfreshly ground black pepper,scant
  • 2tbspfresh mint,finely chopped

Instructions

  1. Combine all ingredients in a medium bowl and mix until well combined. Taste and adjust seasoning if necessary. Cover and chill until ready to serve.

  2. Before serving, drizzle with a bit of olive oil and sprinkle with fresh mint, if desired.
