In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.
Add the onions and jalapeno pepper to the saucepan and sauté until softened, about 5 minutes.
Stir in the minced garlic and cook for an additional minute.
Add the chopped tomatoes to the saucepan and cook for 10 minutes, stirring occasionally until the tomatoes have softened.
Remove the saucepan from heat and let the mixture cool slightly.
Transfer the tomato mixture to a blender or food processor and pulse until desired consistency.
