This cowboy caviar is a mix of corn, avocados, peas, and tomatoes seasoned with a tangy dressing. It’s the perfect Texan dip to pair with crunchy chips!

- 3Roma tomatoes,seeds removed, diced
- 2ripe avocados,diced
- ⅓cupred onion,diced
- 15ozblack beans,(1 can), rinsed and drained
- 15ozblack eyed peas,(1 can), rinsed and drained
- 1½cupsfrozen sweet corn
- 1bell pepper,diced
- 1jalapeno pepper,seeds removed, diced into very small pieces
- ⅓cupcilantro,finely chopped
- tortilla chips,for serving
For Dressing:
- ⅓cupolive oil
- 2tbsplime juice,fresh preferred
- 2tbspred wine vinegar
- 1tspsugar
- ½tspsalt
- ½tsppepper
- ¼tspgarlic powder
Instructions

Combine the tomatoes, avocado, onion, black beans, black-eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss and stir well until well-combined.

In a separate bowl, whisk together the olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.

Pour the dressing over the beans and vegetables, then stir and toss very well.
