Mix together fresh pineapple, bell peppers, and fresh herbs to make this tasty pineapple salsa. The lime juice adds a welcome zing to this bright dip.

  • 3cupspineapple,finely diced
  • cupred onion,minced
  • 1jalapeno,large, seeds and ribs removed, then minced
  • 1red bell pepper,cored, seeded and finely diced
  • ½cupcilantro,chopped
  • 2tbsplime juice
  • salt,to taste


  1. Place the pineapple, red onion, jalapeno, bell pepper and cilantro in a bowl.

  2. Stir in the lime juice and salt.

  3. Serve immediately or cover and refrigerate for up to 1 day before serving.

  4. Serve in a bowl or in a hollowed out pineapple.
