  • tbsp butter
  • 2 tbsp flour
  • 1 cup milk, 1% low-fat
  • ½ cup parmesan cheese, freshly shredded
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 pinch paprika


  1. Melt butter in a medium skillet over medium-high heat. Sprinkle flour into the melted butter, whisking constantly. Cook, whisking constantly, for 30 seconds to 1 minute or until the mixture is golden and lumpy.

  2. Gradually whisk in milk, and bring to a boil. Cook, whisking constantly, for 1 to 2 minutes, or until thickened.

  3. Add freshly shredded Parmesan cheese, salt, pepper, and paprika, whisking until smooth. Remove from heat.

  4. Use immediately. Enjoy!
