Mind-Blowing Eggplant Caviar Recipe

How To Make Mind-Blowing Eggplant Caviar

A simple and easy recipe for inexpensive "caviar" by making use of scrumptious eggplant! This seemingly complex dish doesn't require a lot of effort as you'll soon realize. But it's packed full of flavor that you'd be reaching for more.

Ingredients

  • 1 eggplant, about 2 lbs.
  • 1 cup onion, finely chopped
  • 6 tbsp olive oil, divided
  • ½ cup green pepper, finely chopped
  • 1 tsp garlic, finely chopped
  • 2 ripe tomatoes, peeled, seeded, and finely chopped
  • ½ tsp sugar
  • 2 tsp salt
  • freshly ground pepper
  • 3 tbsp lemon juice

Instructions

  1. Cook whole eggplant in an oven at 425 degrees F for 1 hour.

  2. Turn once or twice until soft and skin is charred and blistered.
  3. Cook onion in 4 tablespoons olive oil until tender and translucent, not brown.
  4. Add green pepper and garlic.
  5. Cook for a few more minutes.
  6. Remove skin from eggplant.
  7. Mash until almost a puree.
  8. Add eggplant, tomatoes, sugar, salt, and pepper to vegetables in skillet with 2 tablespoons of olive oil.

  9. Simmer about 30 minutes until liquid is reduced.
  10. Add lemon juice.
  11. Chill before serving with crackers.
