Ingredients

  • 1medium red tomato,ripe
  • 1garlic clove,crushed
  • 1tbspred wine vinegar
  • 3tbspextra virgin olive oil
  • 1tspdijon mustard
  • 1tbsplemon juice
  • 2tbspwater
  • ½tsporegano
  • salt and fresh pepper,to taste
  • 1tbspshallot,minced

Instructions

  1. Chop the tomato in a food processor.

  2. Add the crushed garlic, vinegar, lemon juice, water, dijon mustard, oregano, salt, and pepper.

  3. Pulse a few times until smooth.

  4. Add the chopped shallot, then mix well.

  5. Set aside a few hours to allow the flavors to blend well.

  6. Serve over salads or other savory dishes, and enjoy!

Recipe Notes

Come up with variations by using different vinegars, adding fresh herbs and honey. Dip a piece of lettuce into it to test if the dressing is good.
