- 1medium red tomato,ripe
- 1garlic clove,crushed
- 1tbspred wine vinegar
- 3tbspextra virgin olive oil
- 1tspdijon mustard
- 1tbsplemon juice
- 2tbspwater
- ½tsporegano
- salt and fresh pepper,to taste
- 1tbspshallot,minced
Instructions

Chop the tomato in a food processor.

Add the crushed garlic, vinegar, lemon juice, water, dijon mustard, oregano, salt, and pepper.

Pulse a few times until smooth.

Add the chopped shallot, then mix well.
