Hot Spinach and Cheese Dip Recipe

Kids may turn their nose away at the idea of spinach, but the adults are sure to enjoy this steaming dip. With a combination of cream cheese and cheddar cheese, who knows, you just might get the kids to try out this yummy cheese dip.

Ingredients

  • 10 oz spinach, frozen chopped, thawed and drained
  • 8 oz cream cheese, softened
  • 1/2 cup scallions, chopped
  • 1/2 tsp garlic pepper
  • 1 cup cheddar cheese, shredded
  • 1/3 cup sun-dried tomatoes , or chopped drained water chestnuts, dehydrated, chopped
  • crackers, and/or cut up assorted fresh vegetables, for serving

Instructions

  1. In a 1-qt. mini-electric slow cooker, mix together spinach & cream cheese.

  2. Cover and cook 2 hours, stirring 1 or 2 times until very hot. Reserve 2 Tbs. cheese for the top. 

  3. Stir in the remaining cheese and sun-dried tomatoes. Sprinkle the remaining cheese on top.

  4. Serve with crackers or vegetables for dipping.
