- 1 pineapple, peeled and sliced into rings
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste

Preheat grill to medium-high heat.

Grill the pineapple rings for about 2-3 minutes on each side until slightly charred. Remove from grill and let cool.

Dice the grilled pineapple rings and transfer to a mixing bowl.
