  • 1 pineapple, peeled and sliced into rings
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste


  1. Preheat grill to medium-high heat.

  2. Grill the pineapple rings for about 2-3 minutes on each side until slightly charred. Remove from grill and let cool.

  3. Dice the grilled pineapple rings and transfer to a mixing bowl.

  4. Add the diced red bell pepper, minced jalapeno pepper, red onion, and cilantro to the bowl. Mix well.

  5. Squeeze the lime juice over the salsa and season with salt and pepper to taste. Stir to combine.

  6. Serve immediately or refrigerate for at least 30 minutes for the flavors to meld together.
