- 4corn ears
- 48ozwatermelon,diced small
- ½cupfresh cilantro,chopped
- 2limes,juiced
- 1cupred onion,minced
- 1largejalapeño,minced
- 1tbspcumin,toasted and ground
- ½tbspcoriander seed,toasted and ground
- 2tspsea salt
- 2tbspcider vinegar,(optional)
Instructions

Shuck the corn and place on the grill, allowing each side to be blistered with grill marks before rotating until all areas are uniformly grilled with dark brown spots.

Using a sharp chef’s or kitchen knife, cut the kernels off the cob.
