  • 5 ½ cup rhubarb finely diced
  • 3 ½ cup sugar
  • 3 oz. strawberry Jell-O


  1. Mix rhubarb and sugar in a bowl, allow to sit overnight.

  2. The next morning, boil the mixture for 15 minutes, stirring constantly.
  3. Remove from heat.
  4. Add Jell-O and mix until it's dissolved.
  5. Pour into sterilized jars.
  6. Cool, and keep in refrigerator.
