Ingredients

  • 12Roma tomatoes,ripe
  • salt
  • 1tspthyme,fresh
  • 1tsporegano,fresh
  • olive oil spray
  • 2tbspbasil,fresh, chopped

Instructions

  1. Preheat oven to 325 degrees F.

  2. Slice the tomatoes in half.

  3. Season with salt, basil, oregano, and thyme.

  4. Spray a cookie sheet with olive oil spray and place the tomatoes, cut-sides up.

  5. Bake for 2 hours until the skin gets wrinkled and crusty on the bottom, and moist in the center.

  6. Puree the tomatoes in a food processor.

  7. If it is too thick, you can thin it with pasta water.

  8. Serve over your favorite high fiber pasta and grated cheese.
