  • 2cupsfresh corn,or canned, or frozen corn, defrosted and drained
  • 19ozblack beans,canned, drained, rinsed
  • ¾cuptomato,ripe, diced
  • 1jalapeno pepper,seeded, finely diced
  • ½cupred onion,finely diced
  • ¼cupcilantro,chopped
  • 3tbsplime juice,(about 1½ limes), fresh
  • 1tbspolive oil
  • ½tspcumin
  • salt,to taste


  1. Place the corn, beans, tomato, jalapeno pepper, onion, cilantro, lime juice, olive oil, cumin, and salt in a medium bowl and toss well to combine.

  2. Refrigerate 1 hour.

  3. Serve and enjoy!
